Description
Fino Ceballos is made with 100% Palomino Fino from the organic vineyards of Pozo Galvan. Fortified to 15% and aged for 3 years under the Criaderas and Soleras system. It is a very approachable Fino, fresh and clean that still shows a fantastic fruit: lime, apple, almonds and herbs with saline and iodine notes. The palate is dry and mineral with a saline and slightly bitter yeasty end. Pairings with tapas, soups, shellfish, fish, semi cured cheese and Jamon Iberico.
