Description
We take a holistic approach to winemaking, using native and organic yeasts. For this wine, we pushed the boundaries of Pinot Gris. Fermenting a high percentage with wild yeast and malolactic fermentation, we achieved dryness. By pressing and settling without additives, the result is a true expression of our site’s Pinot Gris vines, perfect for food pairing.
